Strawberry Chocolate Chip Skillet Cookie

There is a big pizza chain that sells a pizza combo that gives you a big chocolate chip cookie as part of their deal. I’ll admit it; when I first saw it, I got excited to grab a piece. It was pretty good, but not as good as a homemade cookie. So I made my own and it was so easy!

When you are making your own skillet cookie, you can control the amount of chocolate chips that you would like! You can also experiment with different types of toppings such as toffee bits, peanut butter chips, or M&Ms.

As it bakes, the whole house smells likes chocolate chip cookies with a hint of the strawberry; it is just wonderful and, to me, it makes a house feel like a home. Maybe it’s a childhood thing.

When you bite into the cookie, the strawberries on top give it an additional tasty, fruity, sweet flavour and it also makes the cookie pretty cute to look at. You know, if a large chocolate chip cookie wasn’t enticing enough. Top it with ice cream or whipped cream for that extra bit of decadence!

Now onto the recipe.

Chocolate chips, strawberries, flour, sugar, an egg, butter, and vanilla.

Mise en place {see Ingredients for amounts}. Preheat the oven to 350 degrees F. Grease a 10 inch cast iron skillet with butter. In a medium bowl, whisk together flour, baking soda, and salt.

Cream together butter and sugars then mix in egg and vanilla extract.

Gradually mix in flour mixture (flour, baking soda, and salt) until combined. Fold in majority of chocolate chips, leaving a handful.

Spread cookie dough evenly in the skillet and top with the remaining chocolate chips.

Place strawberry slices on top in any pattern you wish. Press chocolate chips and strawberry slices down slightly.

Bake for 30-35 minutes until golden-brown. Let it cool for 15 minutes.

Strawberry Chocolate Chip Skillet Cookie

A large strawberry chocolate chip cookie baked in a cast-iron skillet to create puffed, crispy edges and a soft, chewy center! A delicious dessert that’s perfect for sharing!

Ingredients

  • 2 ½ cup all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup (8 oz) unsalted butter, softened, plus more to grease skillet
  • ¾ cup brown sugar, lightly packed
  • ¼ cup sugar
  • 1 egg
  • 1 ½ tsp vanilla extract
  • 1 cup chocolate chips (I used semi-sweet)
  • ½ cup strawberries, sliced

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 10-inch cast iron skillet with butter*.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer or a wooden spoon, cream together the butter and sugars, until well-incorporated. Then mix in the egg and vanilla extract until smooth.
  4. Gradually add the flour mixture, mixing all the ingredients together until just combined. Fold all except a small handful of the chocolate chips into the dough. Spread the dough evenly into the skillet, then top with the reserved chocolate chips and slices of strawberries, pressing down slightly.
  5. Bake for 30-40 minutes, until golden-brown. Let it cool in the skillet for at least 15 minutes**. Best served warm. Top with ice cream or whipped cream if you would like.

Notes

  • *If you do not have an cast iron skillet, you can substitute with an oven-safe frying pan instead. Bake times will vary so you need to watch closely for doneness.
  • **You can serve it immediately (careful it’s hot), if you like the soft, gooey, melty, chocolatey insides. Dig in with a spoon. By letting it cool, the cookie will harden slightly, making it easier to cut into slices.

WOW this looks fantastic! I can actually taste it now! Crispy on the inside, chewy on the inside chocked full of CHOCOLATE!I have always wanted to bake something sweet in a skillet but am so intimidated by it! Now I have you to hold my hand through it! haha :) So excited to try this out! Whee~!
