Berry Orange Spinach Salad with Citrus Balsamic Vinaigrette

A fresh summer spinach salad that’s delicious and healthy! Dress this salad with a homemade citrus balsamic vinaigrette!

Ingredients

For the salad:

  • 6 packed cups baby spinach
  • 2 mandarin oranges, peeled and sectioned
  • ¾ cup (3 oz) raspberries
  • ½ cup (3 oz) blackberries
  • ½ cup feta cheese, crumbled
  • ¼ cup walnuts

For the vinaigrette:

  • ¼ cup extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp fresh (mandarin) orange juice
  • 1 tbsp honey

Instructions

  1. In a small bowl, whisk together the vinaigrette ingredients until well combined. Taste and adjust the dressing to your preference. Set aside.
  2. In a large bowl, combine the salad ingredients, then drizzle the desired amount of vinaigrette on top. Toss to combine. Serve immediately.

Notes

  • If you are planning to have leftovers, keep the salad separate from the vinaigrette and cover both in the refrigerator for up to 2 days. Re-whisk the vinaigrette and drizzle just before serving.

I’ve been making this for years, not knowing there was a recipe lol. I sometimes change the fruit up to whatever is in season. If you don’t have feta goat cheese is a good substitute & sometimes I add some toasted sesame seeds in as well.

The salad turned out amazing. Thank You!For the dressing, instead of honey I added 1/4 cup of orange juice and 2 tbsp of lime juice. I also added some dry basil and finely chopped fresh mint leaves. Also added 1 tsp of black pepper.

This looks amazing and the dressing looks simple and delicious! Do you think bleu cheese or gorgonzola would work as well? Blue cheese is my husband's favorite so I always try to use it when I can.

I think that blue cheese would work well in this salad, especially if your husband enjoys it a lot. Its salty and pungent flavour would work well with the sweetness of the berries and especially with the citrusy flavours of the orange.
